Soba or japanese buckwheat noodles are great for quick recipes. They are easy to prepare and are healthy to eat. Soba noodles are suitable for vegetarians and those who prefer less gluten in their diet. There are two ways of serving soba, either cold or hot. Cold soba is commonly served with a sauce called tsuyu, which is made of dashi, soy sauce and mirin for dipping. The other method of serving soba is in hot noodle soup. These japanese noodles made from buckwheat have a sweet flavour on their own, which makes them suitable for recipes which require only a few ingredients.

Soba noodle soup recipe

This recipe is good for one serve. Here are the ingredients for making soba noodle soup.

  • one bundle organic soba noodles
  • 1 tablespoon organic miso paste
  • 1 teaspoon dried wakame seaweed flakes
  • 1½ cup hot water
  • 1 leave of spring onion, chopped

Put soba noodles in a pot of boiling water and boil for about 5 minutes or according to instructions on the packet. Drain and discard the water, then rinse the noodles with cold water. Set aside the noodles in a bowl for serving.

Put miso paste and wakame seaweed in a pot and pour in 1½ cup hot water. Boil for two minutes or until the dried seaweed flakes are hydrated. Add in spring onion before turning off heat.

Pour the hot soup into the bowl of soba noodles and serve.


Directions for cooking soba noodles

  1. Soba noodles need to be boiled for a few minutes.
  2. After boiling, the water is to be drained and discarded.
  3. Use cold running water to rinse the soba noodles.
  4. Soba noodles are now ready to be served with the rest of the condiments.

Cold soba noodles recipe

Cold soba is popular in most japanese restaurants in summer. This recipe is easy to prepare and requires less than five ingredients.

  • one bundle organic soba noodles
  • tsuyu dipping sauce
  • one teaspoons dried nori seaweed
  • a dash of wasabi

Boil the soba noodles in hot water until soft. Drain away the water and rinse with cold water. Leave the soba to chill in the fridge for 30 minutes.

Prepare the tsuyu dipping sauce in a dipping bowl and mix in the wasabi. Remove the soba noodles from the fridge and serve on a zaru (bamboo tray) if you have one. Otherwise, serve on a plate and garnish with seaweed. Dip the soba in the tsuyu dipping sauce and eat.
